Paleo Crab Stuffed Mushrooms 2 packages whole mushrooms Crab Mixture 1 pound fresh crab meat 1 cup Almond Meal (Trader Joe’s brand this time it is more of a meal not flour) 1/3 cup celery 1/3 cup onion 1/3 cup red bell peppers 1 egg beaten 1 tbsp parsley 2 tbsp Paleo Mayo (recipe below) 1/4 tsp dry mustard 1/4 tsp red pepper 1/4 tsp black pepper 1/4 tsp sea salt 1/4 tsp paprika 2 tbsp Balsamic Vinegar Preheat oven to 375 degrees Sauté celery, onions and red pepper in olive oil and a few cloves of fresh minced garlic. Cook until onions are clear. Mix all ingredients together in a bowl and set aside. Cut out stems of mushrooms and hollow out center. Before stuffing with crab cake mixture toss the mushrooms in olive oil and garlic powder and place in the oven for about 5 minutes or until tender. Stuff the mushrooms and put back in oven for 25mins. Enjoy!
