Ice Cream

Happy 4th!

What better way to celebrate the birth of our great nation than with ice cream?? With Paleo ice cream of course!!


This yummy goodness is made with coconut milk, eggs, honey, almonds and organic dark chocolate (72%)... Want the recipe? Well want no more...


Base

  • 1 can coconut milk, full-fat;
  • 4 egg yolks
  • Seeds from 2 fresh vanilla beans or 4 tbsp real vanilla extract
  • 3 tbsp raw honey
Mix-ins
  • 1/4 C chopped almonds
  • 1/4 C chopped dark chocolate
  • 1/2 cup of your favorite berries (chopped or blended to a puree)
  • 1/2 cup coconut flakes
  • 1/4 cup finely chopped mint
  • 1/4 cup chopped nuts
  • Lemon, lime or orange zest
  • 1/4 cup dark chocolate chips or flakes (you can take a high quality dark chocolate and chop it yourself to your liking - this is what i did).

1. Add honey to egg yolks and beat until thick and fluffy.
2. Pour the coconut milk into a saucepan and bring slowly up to boiling point but do NOT boil.
3. Pour the hot coconut milk into the egg yolks and honey mix whilst continuously stirring. Then pour the mixture back into the pan and heat gently, stirring until the custard thickens - DO NOT BRING TO THE BOIL OR IT WILL CURDLE.
4. When you can see a film form over the back of your spoon it's time to remove the saucepan from the heat. Leave to cool.
Then you can either:

a) Pour the cooled custard into a bowl and add your chosen flavoring and mix ins, then transfer mixture to an ice cream maker – this is what I did and 20 minutes later, I had cold, yummy, deliciousness!

b) Pour the cooled custard into a bowl and add your chosen flavoring and mix ins, then transfer mixture to an ice cream maker.

Chocolate Ice Cream

So this recipe completely replaced any soft serve chocolate ice cream I used to eat, THIS IS AMAZING.  Really no other way to describe this but pure heaven in a bowl and it is super simple.  This will be an amazing tool out there for those parents whose kids have sweet teeth, if they are gonna eat it might as well be Paleo and Crap free.  Hope you enjoy.


Difficulty

Servings: 2-4
Prep Time: 5 Minutes
Cook Time: 15 Minutes




Tools you may Need:
  • Ice Cream Maker
  • Rubber Spatula
  • Blender
Ingredients:
  • 1 Can Lite Coconut Milk, refrigerated 14 ounces
  • 1/4 Cup 100% Raw Organic Honey
  • 2 Tbsp Cocoa Powder
  • 1 Tsp Vanilla
Process:
  1. Place your cold coconut milk, honey, vanilla, and cacao powder in a blender and mix well
  2. Place your frozen bowl for your ice cream maker in the machine and start it, immediately pour your coconut milk in and let the process begin
  3. It will take anywhere from 10-20 minutes, keeping your ingredients cold helps it set faster
  4. Once done, transfer your ice cream to another bowl and place in the freezer for 30 minutes to an hour to help set it more
  5. Enjoy

No ice cream maker? No problem. Out of rock salt? Don’t need it! You can make this ice cream in just four easy steps.
And let me just get one thing straight. This ice cream is so incredibly smooth and creamy you would never, ever know it’s not churned. Seriously. Creamy. You must trust me on this. I would not lead you astray! :)

Cinnamon Bun Ice Cream Recipe

Cinnamon Bun Ice Cream
2 cups heavy cream
1 (14 oz.) Eagle Brand® Sweetened Condensed Milk
3 tablespoons butter, melted
1/2 tsp ground cinnamon
1/2 teaspoon vanilla extract
Whip heavy cream to stiff peaks in large bowl. Whisk sweetened condensed milk, butter, cinnamon, and vanilla in large bowl. Mix well. Fold in whipped cream.
Pour into a 2-quart container and cover. Freeze 6 hours or until firm. Store in freezer.

Nutella Peanut Butter Chip Ice Cream
2 cups heavy cream
1 (14 oz.) Eagle Brand® Sweetened Condensed Milk
3 tablespoons butter, melted
1/2 cup Nutella
1 cup peanut butter chips
Whip heavy cream to stiff peaks in large bowl. Whisk sweetened condensed milk, butter, and Nutella in large bowl. Stir in peanut butter chips. Fold in whipped cream.
Pour into a 2-quart container and cover. Freeze 6 hours or until firm. Store in freezer.

Krispy Kreme Ice Cream Recipe

Krispy Kreme Ice Cream
2 cups heavy cream
1 (14 oz.) Eagle Brand® Sweetened Condensed Milk
1 tsp vanilla extract
5 Krispy Kreme glazed doughnuts
Add vanilla to heavy cream and whip to stiff peaks in large bowl. Chop Krispy Kreme doughnuts into small pieces. (I used a food processor and it did excellent.) Stir into sweetened condensed milk. Fold in whipped cream.
Pour into a 2-quart container and cover. Freeze 6 hours or until firm. Store in freezer.

Hazelnut Mocha Fudge Swirl Ice Cream Recipe

Hazelnut Mocha Fudge Swirl Ice Cream
2 cups heavy cream
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
2 tablespoons Hazelnut or French Vanilla ground coffee
1/2 cup Smucker’s Milk Chocolate Ice Cream Topping
1 bottle Smucker’s Magic Shell Chocolate Fudge Flavor
Combine the cream and coffee in a medium, heavy saucepan. Bring to a gentle boil over medium heat to dissolve the coffee. Remove from heat and strain the mixture into the bowl of your mixer. Cool in fridge. Meanwhile, whisk together sweetened condensed milk and chocolate ice cream topping in large bowl. Set aside.
When chilled, beat the cream to stiff peaks. Fold into sweetened condensed milk mixture.
Pour into a 2-quart container and cover. Store in freezer. After 1 hour, remove from freezer and swirl on the Chocolate Fudge Magic Shell. Stir gently once or twice. Return to freezer for another hour, then remove and gently stir, breaking up the fudge shell. Add more if desired, and repeat 2-3 times as desired.

coconut chocolate chip ice cream

dairy-free coconut chocolate chip ice cream recipe
This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day.  Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.
It's fun (and super easy) to make dairy free ice cream from coconut milk.  Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.

Coconut Chocolate Chip Ice Cream

  • 1 (13.5 ounce) can can coconut milk
  • 2 eggs
  • 2 tablespoons coconut palm sugar
  • 1 tablespoon vanilla extract
  • ⅛ teaspoon celtic sea salt
  • ½ cup dark chocolate chips
  1. Place coconut milk, eggs, coconut sugar, vanilla, and salt in a Vitamix
  2. Blend thoroughly until smooth and well combined
  3. Briefly blend in chocolate chips, so that they are smaller pieces
  4. Process according to the directions of your ice cream maker
  5. Serve --garnish with unsweetened shredded coconut if desired
