Zucchini Boat Pizza

Cooking Steps

1. In small skillet cook ground beef with Italian sausage seasoning. Drain and set aside.
2. Slice large zucchini in half lengthwise and scoop out the inside.
3. In small bowl, mix, parmesan cheese, red sauce, black olives, tomatoes, pizza seasoning.
4. Add ground beef mixture to cheese mixture and fill zucchini boats.
5. Top with mozzarella cheese and bake at 400°F for 20 minutes.
6. Garnish with a little more sauce and a few sprinkles of the parmesan cheese blend.
7. If you are proper you can eat with a knife & fork. If not, use your hands!

Ingredients

  • 1 Large Zucchini
  • 6 oz. Grass Fed Ground Beef
  • 1/2 tsp. Penzey's Italian Sausage Seasoning
  • 1/4 c. Parmesan/Asiago/Fontina Cheese Blend
  • 1/3 c. + 2 Tbsp. Organic Red Sauce
  • 2 Tbsp. Black Olives, chopped
  • 1/4. c. Sun Dried Tomatoes, chopped (not oil packed)
  • 1/2 tsp. Penzey's Pizza Seasoning
  • Mozzarella Cheese

I made a pizza crust out of shredded zuchini, egg, parmesean and garlic. A couple of people have asked me how...here is what I did:


Shred a medium sized zuchini, salt it, leave it in a colander for about 20 min to drain. Use paper towels to squeeze more water out of it (the drier the better.)


Stir in a couple eggs, a couple of cloves of minced garlic and a cup of grated parmesean cheese. Spread in a pan (I don't know the dimentions of mine...bigger than 9x13) and bake at 400 for 20 min. It comes out a bit like a fritata.


Put the toppings on and bake for another 10-15 min.


I used mozarella, italian sausage, red onion, fresh basil, olives. Next time I will go greek and use chicken, feta, artichoke hearts, olives, etc. The possibilities are endless.

Bacon Dream Pie

Cooking Steps

Preheat oven to 400 degrees

Line baking dish with bacon

Bake until crispy golden dilicious. Drain grease.

mix 3 eggs in bowl. Pour over bacon in baking dish.

Place back into the oven and bake for 3-4 minutes until egg mixture is firm.

Remove from oven, drain any extra grease that may of developed. Spread pizza sauce and top with your favorite cheese and toppings.

Place back into the oven and bake until cheese is a golden. Enjoy!

Crust

Pizza Crust

While we really like Meatzza style pizza, Loralei specifically asked for 'the regular kind' of pizza yesterday. Though I wasn't feeling very well, I decided to try my hand at making a pizza crust, and it actually worked out very well. This crust would also work great as a bread alternative, as it could be cut into slice size pieces after baking.

Pizza Crust
2 eggs
1/2 C Coconut Milk
1/3 C Coconut Flour
1/4 C Almond Flour
1/4 C Arrowroot Powder
1 tsp baking soda
1 tsp onion powder
1/2 tsp salt

Preheat oven to 350. Prepare a pan by fitting with parchment paper and lightly greasing with extra virgin olive oil. In separate bowls, combine wet and dry ingredients. Stir wet into dry. The crust will be more of a batter consistency than a dough consistency.
Pour onto prepared parchment paper and form into the shape desired with a spatula.
Place in oven for 20 minutes till firm.
Remove from oven and top with desired toppings. Return to oven till toppings are heated through, or cheese is melted.
Enjoy!

Chicken Crust Pizza

Cooking Steps

Flatten the chicken as thin as you can between two pieces of wax paper. Use a meat tenderizer or a rolling pin for this, and then remove wax paper. Place chicken on a baking sheet sprayed with olive oil cooking spray. Brush chicken with extra virgin olive oil. Broil for 1.5 minutes on each side. Take out and top with sauce and toppings. Bake for about 10-15 minutes at 350*F until cheese is slightly browned.

  • 6 oz Chicken Breast
  • 2 large thin slices of pepperoni
  • 2 mushroom, sliced
  • 1 tablespoon red sauce or pizza sauce
  • 1 oz mozzarella cheese
  • 1/4 red pepper, diced
  • 1/4 red onion, diced
  • extra virgin olive oil
