Chocolate Chip Scones
- 2.5 cups of almond flour (I buy whole almonds and ground them in a food processor till they're dust-like/tiny chunks - OR you could buy almond flour from Giant Eagle under Bob's Red Mill).
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/3 cup oil *(I use coconut oil, but I think Olive Oil would work too)
- 1/8-1/4 cup of honey ( Nate and I go with 1/8 but it depends on how sweet you want it).
- 2 eggs
- 1 cup of dark chocolate chips
Preheat oven to 350
- Line 2 baking dishes with parchment paper
- In a large bowl combine almond flour, salt, and baking soda.
- In a medium bowl whisk together the oil, honey and eggs.
- Stir the wet ingredients into the almond flour mixture until combined
- Then fold in chocolate.
- Drop batter in cant 1/4 cups 2 inches apart, on to baking sheets.
Bake for 12-17 min, until golden brown or a tooth pick in middle comes out clean. Let cool for 30 minutes on baking sheets then serve.
