Prep: In a griddle pan add streaky bacon In your boiling pan of water add your egg and blanch the plum tom – apparently when you ‘criss cross’ the end of a plum tom there’s only one right way to do it. When you mushroom is done, add half the rocket, half the cheese the other half of the rocket and the other half of the cheese – then kriss kross the sausage meat, flatten the tom, add that, then peel your egg and rip it in half. Stick the sausage, a thick slice of feta cheese and the mushroom under the grill (stick a bit of butter on the mushroom if you like and make sure you season it)
After 30-40 seconds dunk the tom into some cold water – peel off the skin, remove the core, slice it in half and add it to the grill. By this point flip your mushroom (not a euphemism) and keep an eye on your cheese. Cut open your sausage too (really, REALLY, not a euphemism) and let the meat inside grill a bit or add it to the griddle pan with the bacon to get some sexy grill lines.
